i dont like to follow recipes; i usually eyeball the amounts of ingredients i need. soooo i dont have the quantities for the ingredients to make these lovely, stuffed red bell peppers. you'll just need the following, accommodated to the amount you wish to serve :
red bell peppers
1-2 garlic cloves
chopped baby portabella mushrooms
cooked brown rice
red pepper flakes
organic, low-sodium chicken broth
salt & pepper to taste
finely chop your veggies, onion & mushrooms
cook your brown rice
saute your olive oil, garlic, & veggies. sprinkle with
ground basil & red pepper flakes.
add chicken broth, ground chicken, mushrooms & rice.
cook until chicken is no longer pink.
spoon mixture into topless red bell peppers.
cover & bake at 350 for 35 minutes.
serve with baked potatoes and left over
stuffing mixture. enjoy!
